My preference has always been to build my models as if my display case was a miniature museum, where all the aircraft and models have been restored to pristine condition. Only weathering I tend to do on the exterior is a bit of oil washes, panel lines and maybe some exhaust staining. Cockpits normally have a bit more wear but that's about it.
